Eels are a hermaphrodite and an order of fish (Anguillidae), live in freshwater. Freshwater eels or swamp eels’ scientific name is Fluta alba (South of Vietnam) or Monopterus albus (North of Vietnam).
Eels’ conformation and respiratory organs are quite remarkable: smooth skin, no scales, snake-shaped, round body, diameter is 2~3 cm, body length is 30~60 cm, may respire through sinus, skin, and nostrils. In gonad, there are both scrotum and ovaries. Therefore eels called a hermaphrodite; according to a research that shows all baby eels are female eels. But after reproduction, the eels gradually turn into male eels.
So, we can distinguish male eels and female eels by body:
-Length less than 20 cm is usually female eels.
- From 22 cm up, eels gradually shift their gender. Length from 35 to 45 cm: the number of males more than females.
- From 55cm up: mostly male eels.
Growth: Eels eat and grow strongly in the summer. In winter, they eat less or stop eating (in climate of Nothern Vietnam), so eels grow slowly or stop growing. At temperature below 15°C, they stop eating; below 10°C they find muddy cave-dwelling to avoid winter cold; appropriate temperature is from 22°C to 28°C, and eels will die when temperature above 36oC.
In the world, the eels are ranked as a great delicacy for VIP guests and heads of state, and also a precious remedy in traditional medicine.

According to Oriental medicine, the eels have medical properties such as: Blood tonic (for anemic people), cure for rheumatism, malnutrition, dysentery, spinal pain, internal haemorrhoids and white discharge. Pregnant women should not use eels.
With a nourishing property as a blood tonic, eel blood (benign fish blood) has the abilities to enhance vigor, to help circulation, to cure dry mouth and pain in the ear and to enhance sexual ability.
